A FEW WORDS ABOUT COFFEE SHOP OPERATING LICENSES
A coffee shop is a store where coffee is roasted, ground, and sold. In addition to ground, bulk, or packaged coffee, the same store is also allowed to sell chocolate products, candy, and biscuit products, as well as herbal products or preparations thereof, which are used for making beverages (tea, etc.) and spices.
Sales area (mainly store) of sufficient capacity, depending on the store’s customer traffic, in such a way as to ensure comfortable customer circulation and easy cleaning, and in any case not less than 15 square meters. except for butcher shops, where the sales area shall be at least 30 square meters.
Storage space, proportional to the commercial activity of the store. Storage space is not necessary in small stores with an area of 20 square meters, if they are single-purpose, or 40 square meters, if they are mixed-use or butcher shops.
Staff toilets, the number and construction of which shall be in accordance with Article 25 hereof. In the case of small shops referred to in this article, the Health Service may, at its discretion, exempt them from the obligation to have a toilet, or accept, by way of derogation from the provisions of this article, a toilet without an antechamber, provided that no more than two persons are expected to be employed in the shop and on condition that the location of the toilet (e.g. in an isolated area) or, in particular, its construction (necessary complete ventilation, wall cladding with porcelain tiles, installation of an automatic closing mechanism on the door, etc.) provide the necessary guarantees to protect the shop environment from the adverse effects of the toilet (odors, etc.). The above areas shall be separated from each other by walls or other solid structures that can be easily cleaned and do not provide a breeding ground for mice, cockroaches, etc.
The walls of fishmongers and butchers must be covered with porcelain tiles or oil-painted, impervious, and smooth to a height of at least 2 m. The items for sale shall be neatly arranged inside the store. Food vendors shall be healthy and perfectly clean and shall wear a white or light-colored clean shirt. The Health Service may require stores covered by this article to hire a cashier if it considers that their customer traffic warrants such a measure.
