A FEW WORDS ABOUT BUGAZADIK OPERATING LICENSES
A bougatsadiko is a shop where bougatsa and all kinds of other pies (cheese pie, spinach pie, meat pies, sausage pies, etc.) accompanied by soft drinks or beer.
BUILDING: Urban planning permit – permanent construction, main use. Temporary structures made of wood, sheet metal, etc. are prohibited. Communication with residences or other stores and common areas of apartment buildings is prohibited. The operation of the above shops on the ground floor or other areas of apartment buildings is not permitted if their installation is prohibited by the regulations of the apartment building or, in the absence of regulations, by the majority of the owners of the residences housed in the same building.
It is prohibited to operate on floors of apartment buildings that have residential apartments and in basements, unless they are main use areas.
With a certificate (main use) from the Town Planning Department, the use of legal open balconies is permitted. The use of basements is permitted only for auxiliary spaces (storage room – toilet).
For capacities exceeding 50 seats, specialization in the use of the space is required by the town planning department.
2. HEIGHT: As specified by the General Building Regulations and no less than 2.5 m, and in traditional settlements 2.2 m.
3. WALLS: Smooth surfaces up to a height of 2 m – non-porous (tiles above work surfaces and the sink at a height of 0.75 m).
4. ROOF: Smooth surfaces without cracks or holes.
A false ceiling is necessary on tiled roofs and on wooden roofs where another family lives directly above.
5. FLOOR: Smooth and impervious.
6. VENTILATION: Complete natural or technical ventilation with air renewal system.
7. LIGHTING: Complete natural and artificial.
8. WATER SUPPLY: From an approved water supply network.
9. DRAINAGE: Into the sewer system or into cesspools (if there is no sewer system).
10. TOILETS: Up to 40 people require 1 toilet.
From 41 to 120 people, 2 toilets are required.
From 121 to 250 people, 3 toilets are required.
From 251 to 500 people, 6 toilets are required.
Toilets must be located inside the store but away from the preparation area.
Dimensions of toilet and vestibule: height
2.10 m – length 1.20 m – width 1.00 m.
Total area of a complete toilet: 2.50 m².
Walls must be permanently constructed with tiles at a height of 1.80 m or other suitable material. Wooden structures are prohibited.
The vestibule will contain washbasins, coat hooks, soap, hand towels, or a hot air dryer.
The restroom must have natural or artificial ventilation. Shops measuring 100 square meters or more must also have a toilet for people with special needs. 11. SINK: Three stainless steel basins with hot and cold water and tiles on the wall up to a height of 0.50 m.
If you are preparing desserts or appetizers, you will need another large bowl.
An electric washing machine is required for more than 200 seats.
12. CABINETS: For storing utensils and food, and must be closed.
13. REFRIGERATORS: With sufficient capacity.
14. ROOM: There is no limit to the size of the room.
15. TOTAL AREA OF AUXILIARY SPACES (PREPARATION ROOM –
WASHROOM – REFRIGERATOR).
Up to 50 seats require 30 square meters.
From 51-100 seats required 43 sq. m.
From 101-200 seats, 55 square meters are required.
Up to 50 seats require 16 square meters without a workshop.
For 51-100 seats, 20 square meters are required without a workshop.
From 101 to 200 seats, 24 square meters are required without a workshop. Refreshment stands, bougatsadika, and loukoumatzidika may have fewer square meters under certain conditions. It is not permitted to place their facilities and equipment outside the store.
